This grilled shrimp salad is easy to make, and yet the taste is mouth watering. I've combined with classic Spanish style grilled shrimp with mixed greens and herbs, all topped off with a cool Ceviche dressing that is fabulous on a warm summer day. Add grilled pineapple and you have a true tropical treat that's beautiful to serve to guests. We haved served this chilled dish to over 800 hundred customers in the last 3 months. | Grilled Pineapple and Shrimp Ceviche
6 oz. Shrimp, peeled, deveined, tail off 1 each Lime, juiced 1/2 each Orange, juiced 1/2 each Tomato, ripe Diced 1/2 each Mango Dice Salt Pepper Ripe Pineapple Grilled and Dice Cilantro Chopped Spring Mix Lettuce 1 Bunch
Combine first 9 ingredients in a bowl for aproximatly 45 minutes. Every 15 minutes toss ingredients around.While waitting on ceviche to cook-- get your plate ready for service. When ready take lettuce and place on center of plate and drop Ceviche on the center of the lettuce.. The reminder of the Ceviche sauce pour over the salad.
